Blueberry-Jalapeño Goat Cheese Log

Ingredients
1 (12 oz) pkg fresh blueberries
1 small jalapeño, seeded and finely chopped
1/4 cup granulated sugar
2 Tbs apple cider vinegar
1 (8 oz) goat cheese log
Directions
- In a saucepan, combine the blueberries, jalapeño, sugar and vinegar. Stir to combine. Bring to a boil. Let the mixture cook until the berries break down and release their juices. Cook for 7 to 10 minutes or until thickened. Remove from heat. Chill in the refrigerator for at least 2 hours or overnight.
- Lay a large piece of plastic wrap (about 8 x 10) on a work surface. Spread half of the blueberry mixture onto the plastic wrap in a rectangular shape. Place the goat cheese log on top of the berries. Spoon the remaining berry mixture on top of the cheese log.
- Wrap the plastic wrap sheet over the blueberry goat cheese log. Roll and wrap it until tightly sealed. Chill in the fridge for at least 2 hours. Serve the blueberry goat cheese log as part of a meat and cheese charcuterie board. Surround it with your favorite crackers, toast crisps or crostini.
